Monster Rock Cakes

I had a few requests for the recipe for these yummy cakes so here it is! Monster Rock Cakes… aka, chocolate wafer cake… aka, old fashioned Nabisco’s Famous Chocolate Refrigerator Roll.  I just switched it up to make them into mini cakes, with a lot of color!

Ingredients:

2 cups heavy whipping cream
1 tsp. vanilla
1 package (9oz.) FAMOUS Chocolate Wafers
Wilton gel coloring (or any gel coloring)

Preparation:

STIR together cream, vanilla, and coloring. Keep adding coloring until you get the color you want, just remember the hue will be a little darker after beating the cream.

BEAT mixture with mixer on high speed until stiff peaks form.

SPREAD 1-1/2 tsp. whipped cream onto each wafer; stack

REFRIGERATE 4 hours.

I layered each mini cake 6 wafers high, spread the whipped cream onto each wafer and then frosted the outside with the opposite color. Placed on a cupcake wrapper and refrigerated until the party!

To get these colors I used a leaf green and royal blue.  I wanted super bright colors so I used a lot of gel! Just make sure you don’t use regular food coloring with this cake… the reason you need gel (or powder coloring) is because a regular food coloring will flatten the whipping cream. Also, be sure you add the coloring before beating the mix.
